Sweet Lemon Froth Tea

This lemon tea feels like comfort and health in a mug. The lemon froth is fantastic and requires no extra steps, just a high-powered blender. It's a must-have recipe if someone has a cold in your family. Believe me, you will also want to drink it when you are well.
It can also be refrigerated and poured over ice for a refreshing, cold lemon tea on a hot day.

Equipment

  • High-powered blender (We use a Vitamix.)

Ingredients
  

  • 1 &1/2 whole lemons, peeled & de-seeded It is ok if a few seeds make it into the blender. Leave the white part (the pith).
  • 1 tsp lemon rind, roughly chopped
  • 1/2 cup honey Dark, Buckwheat honey is best for a cold, according to our pediatrician. You can try different types of honey to see how the flavor of the tea changes. (We try to buy local honey when we can.)
  • 4 cups water

Instructions
 

  • Add all of the above ingredients into the blender.
  • Blend until the liquid is warm and steam starts to come out of the blender when the cover is removed (app 5 minutes.) There should be about 1" of froth on top of the liquid. If you want the liquid to be even warmer or you want more froth, keep blending it until you reach the desired results. Sip and savor!
