Spicy Lemon Ginger Froth Tea

This warm, healthy, comforting tea has a spicy, gingery kick to it. I always crave it hot when I'm sick, but it is also very comforting when well. It truly feels healing.
Want a more refreshing option? Cool it down in the fridge to drink over ice.

Equipment

  • High-powered blender (We use a Vitamix.)

Ingredients
  

  • 1" of ginger with peel I did not grate or chop it. Yes, I left the peel on. (We try and find organic ginger.)
  • 1 &1/2 whole lemons peeled and de-seeded. Don't worry if some seeds make it into the blender. Leave the white parts (the pith). Save some of the rind for the next step.
  • 1 tsp lemon rind roughly chopped
  • 4 cups water
  • 1/2 cup honey Dark, Buckwheat honey is best for a cold, according to our pediatrician. You can try different types of honey to see how the flavor of the tea changes. (We try and buy local honey when we can.)

Instructions
 

  • Add all of the above ingredients into the blender.
  • Blend until the liquid is warm and steam starts to come out of the blender when the cover is removed (app 5 minutes.) There should be about 1" of froth on top of the liquid. If you want the liquid to be even warmer, or you want more froth, keep blending it until you reach the desired results.
    If you want the tea to be super hot, but you don't want to make more froth when blending it, after you see the amount of froth you want, put the liquid into the microwave.
  • Taste it to see if it's spicy enough. If you want even more of a kick, add more ginger. Remember that it is better to start with a smaller amount of ginger, so increase it a little at a time, and taste as you go. This way you balance the spice with the rest of the flavors. Enjoy!
