Lemon Ginger Spiced Slushy

Want a slushy with a bolder flavor and more of a kick to it? Try this lemon ginger spiced slushy. Our 11-year-old daughter literally said, "It's to die for and not too spicy."
Share it with your guests after a BBQ on a hot summer day for something light and surprising.

Equipment

  • High-powered blender (We use the Vitamix.)
  • ice cream maker (We use the Gelateria from Cusinart, ICE-70 series.)

Ingredients
  

  • 3/4 tbsp ginger with peel (We keep the peel on.)
  • 1 & 1/2 lemon peeled (Don't worry about the seeds too much.)
  • 1 tbsp lemon rind roughly chopped
  • 1/2 cup honey
  • 4 cups water

Do not blend the ingredients below.

  • 1/2 tsp grated ginger
  • 1/4 tsp lemon zest We like to use a microplane.

Instructions
 

  • Blend first 5 ingredients in a high-powered blender until steaming (about 3-5 minutes.) It does not have to be hot.
  • Put grated ginger and lemon zest in the blended mixture, but Do Not blend.
  • Place the mixture in an ice cream maker. We us the gelato button on our Cuisinart Gelateria. Churn for about 15-20 minutes, depending on your desired consistency.
