Lemon and Honey Slushy

This natural lemon-flavored slushy is what you want on a hot summer day. Skip the artificial slushies at the amusement park, but keep the nostalgic memories of them. Have an even better, much healthier, and less expensive one ready to go in the freezer when the kids come home.
Just let it sit out for fifteen minutes, and it's slushy time!

Equipment

  • ice cream maker (We use the Gelateria by Cuisinart, ICE-70 series.)
  • High-powered blender (We use a Vitamix.)

Ingredients
  

  • 1 & 1/2 lemon peeled (It is ok if you cannot get all of the seeds out.)
  • 1 tbsp lemon rind roughly chopped
  • 1/2 tbsp ginger roughly chopped, no peel
  • 6 tbsp honey
  • 4 cups water

Do not blend the ingredients below.

  • 1/4 tsp grated ginger
  • 1/4 tsp lemon zest

Instructions
 

  • Blend the first 5 ingredients in a high-powered blender until the blender starts to steam (3 to 5 minutes). It doesn't have to be hot.
  • Add the grated ginger and lemon zest to the mixture, but Do Not blend it.
  • Pour the mixture into an ice cream maker. I used the gelato button on my Cuisinart Gelateria. Let the machine churn the mixture anywhere from 15-20 minutes, depending on the consistency that you desire. (A slushy with more liquid equals less time.) Enjoy!
